TIMBER! Cookie Recipe

TIMBER COOKIES

Vanilla dough:

1 ½ cups flour

¼ teaspoon salt

1/3 cups butter

1 teaspoon vanilla

¾ cup sugar

Mix together above ingredients with a mixer until crumbly. Add 1 egg and 2 tablespoons milk to form dough. Remove from mixing bowl to refrigerator.

Chocolate dough:

1 ½ cups flour

¼ cup cocoa

¼ teaspoon salt

1/3 cup butter

½ teaspoon vanilla

¾ cup sugar

Mix together until crumbly. Add 1 egg and 3 tablespoons milk. Mix until it comes together as a dough

Sprinkle board with flour and roll cocoa dough into the shape of a rectangle.

Sprinkle a baking tray with a little flour and transfer the cocoa dough rectangle to the baking sheet with a spatula (you may want your parent’s help).

Repeat the process with the vanilla dough, making it the same size as the cocoa dough rectangle. Transfer the dough on top of the chocolate dough.

Roll up the dough from the short end tightly into a log. Pinch to seal or use a little beaten egg to seal the dough closed. Sprinkle the board with a little flour and transfer the log to the board. Roll out gently until it reaches 45 cm (15 inches) long. Cover with plastic wrap and put it on a tray in the refrigerator for 2-4 hours or until stiff (This is important or you won’t get round cookies).

Remove cookie dough log from the refrigerator and roll slightly to make it round. With a sharp knife, cut dough in 1.5 cm (½ inch) slices and place on a baking tray lined with parchment paper or slightly greased. Bake at 180C (350F) for 12-14 minutes. Transfer to a rack to cool. Makes 30 cookies.
